Happy Independence Day!

Happy Tuesday Everyone!


Hope everyone is ready for a fun and safe Independence Day! The Clickso office will be closed Wednesday, July 4th, as many of you probably are as well. Around the office it seems everyone is doing something different. The best part about living in the Chicagoland area is that you’re always near some body of water, so there is sure to be fireworks wherever you are. I myself am going to Lake Geneva in Wisconsin. It’s a small vacation town with lots of beaches and bars, so that should be fun. Surprisingly not many people are grilling out at home, but rather they are going to a cook out at a friend or neighbors. In case you’re one of those people, I found a fantastic popsicle recipe sure to please everyone!

They are called Raspberry Banana Yogurt Pops and they are so good! So simple to make too, just put 1 banana and 1 cup vanilla yogurt in a blender and blend until smooth. Meanwhile, put 3 cups fresh or frozen raspberries (or blueberries, strawberries or any kind of berry you wish) and ½ cup honey in a pot and heat until boiling. Once it’s boiling, turn the heat down and simmer for 5 minutes. Then just layer the two blends in a popsicle mold, pop in the flat wooden sticks and freeze! I usually freeze them overnight, but anything over 6 hours should be good. Enjoy!

I think for the most part, a lot of people have the same idea of Independence Day and that is fireworks, cook out’s and rocking the red, white and blue. It really made me want to dig deeper and learn more about the day in and of itself. Not just the celebration of the drafting of the Declaration of Independence but just things that are related to this day. For example, July 4th is the day Henry David Thoreau began Walden experience by moving to a cabin at Walden Pond, something the literary world is forever grateful for. July 4th is also a day of many births and many deaths. Both Thomas Jefferson and John Adams died on July 4th, 1826. Adams and Jefferson, both former presidents and signers of the Declaration of Independence were actually bitter rivals. On the flip side, Malia Obama, George Steinbrenner and Neil Simon were born on July 4th.
